The brewery was founded 1912 in the prefecture Iwate, in the area of Nanbu. Nanbu Bijin means beauty of the Nanbu region and also characterizes the philosophy of the brewery. Using innovative methods lead to the production of characterful sakes.

Founded in 1902. Yuki no bosha means snow hut. The building was designated as a Tangible Cultural Property by the Agency for Cultural Affairs. As for the Sake which reminds of pure snow , it is brewed under the commands of the famous Toji master Takahashi with Water coming down from Mt. Shinzan.

Awarded as "The brewer of the year 2018" and as winner of gold medal in 7 categories by IWC - Hatsumago is very sucessfull using the tradional Kimoto method. This results in the good umami taste and creamy dry finish. It established in 1893 in Sakata by family Sato. Its Sake named "Hatsumago" that means the first grandchild.

Founded in Miyagi prefecture in 1724 as sake brewer for offerings to the Shiogama shrine. Since the 1930s the brewery was led by the famous brewing master Hirano and gained important prizes. They are famous for their aromatic Ginjo style with strong character. The brewery developed the sake yeast no. 12.

Founded 1597 in Yonezawa, Yamagata. The company originally provided Sake for the use of the Daimyo (lord) UESUGI, who ruled in this local area. In addition, during the Edo period, the company was allowed to manufacture Sake even though prohibition laws were then in effect because the shortage of rice.

Since 2010 the brewery only brews Junmai styles of Sake, using no additional alcohol. For Yamagata Masamune, Junmai Sake are better to fully express the rich umami flavours of rice.
Their objective is making Sake that are generous, rich and expressive of the rice and with a crisp finish.

Founded 1880 in Tsugawa/Niigata at the Agano river. Good rice from the nearby Niigata rice fields, sof source water and the snowy winters lead to a clean and tasteful sake. The name Kirin is given after a fable animal, which is considered to bring luck.

The Tedorigawa Yoshida Sake Brewery was founded in 1870 in Ishikawa prefecture. The brewery owes its long history of quality sake manufacturing from the local rice and superior water from Mount Hakusan. For over 140 years, Yoshida sake has been a favorite of locals and people all over Japan. The brewery is the subject of the documentary “The Birth of Saké” from 2015 that won several awards and is a tribute to the 2000-year-old art of brewing sake. The brewery is now lead by sixth-generation heir, Yasuyuki Yoshida.

The brewery was founded 1733 in the beautiful old town Echizen Ono in the prefecture Fukui in western Japan. The source water of the city ist considered among the top 100 waters of Japan and is well suited for sake making. The 9th generation Yasuta Nanbu is using organic rice from local farmers and produces organic sake.

Established in 1854 in the old trading town of Katori in Chiba Prefecture by the Iida family. Chiba prefecture is the home of Koikuchi (dark) soy sauce and the biggest soy sauce producing area in Japan. It has supported Tokyo's soba, sushi and Japanese food culture since the Edo period. The brewery has been valuing traditional methods with carefully selected ingredients for their premium soy sauce, while in parallel producing standard soy sauces. They also make custom-made sauces for famous yakitori and ramen restaurants. Their soy sauces support the Japanese food culture in many ways.

The Kitahara family established their sake brewery “Onakaya” in Takato in Yamanashi prefecture at 1749. And shortly after that a new branch at Hakushu because of the water. The water of Ojiro River is one of the 100 best sources of water in Japan. The founders of the modern corporation were Torasaburo Kitahara and Hyogo Kitahara, who, as the twelfth-generation owner, currently runs the business. The brewery strives to maintain a consistent Sake that has been successfully brewed for generations.

Founded in 1875 in the old castle town of Matsue in Shimane prefecture by Moriyama family. Possesses 100 barrels, partly over 100 years old. All their products are made from whole soybeans and fermented without artificial heating during the fermentation and maturation. This natural brewing is a traditional method that relies only on the natural heating of the fermentation process. The fermentation and aging take around three years, the warmer temperatures of two summers helping to increase the process, resulting in a mellow palate and a fuller taste and aroma.

Founded 1882 in Shimane prefecture. The brewery is named after the great Chinese Poet Rihaku (chin. Li Bai, 701-762 a.c.). The brewery has high quality parameters and uses the best local rice from the region.

Established 1864 in Aichi prefecture. The Sekiya Brewery is located in a mountain valley pass in the Japanese Alps between Nagoya and Nagano. For hundreds of years the town was a waypoint and resting place for travelers between the two cities. Sekiya Brewery was established because of the abundance of clean water from the mountains to make sake and the thirsty travelers crossing the mountains. Now it is a state-of-the-art sake brewery with a tasting room and sake-focused restaurant.

Founded 1781 in Nagoya. The name established well end of the 1990ies, when Kuheiji KUNO in the 15th generation took over the business. He previously worked in France and brought his ideas and knowledge of French wines. Noblesse, smoothness and fruitiness are leading priciples of the Kuheiji saké.

Established 1751. With a venerable history dating back to the Edo era, Matusmoto is one of the oldest sake breweries in Kyoto and has been designated as a National Heritage site by the Japanese Government. They have been making only junmai-shu (sake with no added alcohol) at the same location for over two hundred years.

Established 1902 in Kyoto prefecture. Fujioka Shuzo is an incredibly small brewery with Mr. Fujioka personally overseeing each step of the labor and time intensive process to produce a truly handmade sake. In 2002, 5th generation Masaaki Fujioka re-opened the brewery establishing the new Sake brand “SOOKUU” aiming to brew a Sake with its taste reflecting a gentle clear blue sky. Fushimi is nationally known in Japan for its refined water that gives SOOKUU its distinctive silky taste.

The brewery was founded in 1637 in Fushimi, an area in Kyoto famous for its high quality underground water. The name "Gekkeikan" means laurel wreath, a symbol of victory and glory. In 1909, the brewery opened the Sake Brewing Research Institute, the first one established by a sake brewer. They adopted new technologies such as bottled sake without preservatives and all-season sake brewing.

Ogasawara Mirin brewery is located in Hekinan city, Aichi prefecture, where mirin brewing has been famous for more than 200 years. They use only Japanese sweet rice, hand-made processed koji and Shochu.

Founded in 1910 in the Mikawa area (Aichi prefecture), the home of mirin production with the largest number of mirin brewers in Japan. They brew mirin with a traditional method, using only sweet rice, Koji and rice distillate. It takes two years to complete the brewing and maturing. This traditional method gives a mild and profound sweetness.

Founded 1751. The best sake rice and source water are brewed carefully. The brewery is located in the famous sake village Nada in Kobe in Hyogo prefecture. Because of the high quality sake from Nada was already famous during the shogun period. The water is rich in minerals and generates a clear and powerful sake profile. Therefore sake from Nada is called “Otoko-sake (men’s sake)”.

Founded 1841 in the birthplace of soy sauce Yuasa, in Wakayama prefecture, by the Kano family.
Using a traditional recipe since the foundation, higher soybeans share (6 x soybeans, 4 x wheat) and only Japanese ingredients (soybeans, wheat). After pressing, the soy sauce is cooked and reduced for half a day in traditional cauldrons with open fires using local pine wood.

Founded 1688. The Name Amabuki means „wind from heaven“. Rice from Saga prefecture and the mild water from Seburi mountain are brewed by a young generation of sake brewers. A special development of the brewery is flower blossom yeast. The brewery grows its own rice without using pesticides.

Satasouji Shouten was established in Kagoshima in 1908. Their three principles are ""Kou"" (culture), ""U"" (clay jars for fermentation) and ""Han"" (relationships), that express the gratitude to the soil, time and people.
Following a careful analysis of fermentation, temperature and distillation, they developed methods that bring out the best of the raw materials in their products. All their spirits are made from their Imo (sweet potato) Shochu, which doesn't interfere with the aroma.

The Amami Oshima brewery is located on Amami Oshima island, between Kagoshima and Okinawa. Their Kokuto Shochu is 100% made on this island. They grow their sugarcane and produce muscovado from it. They use the famous water called “Jougo”, said to be the most delicious water in Amami Oshima island. All the Shochu in this distillery must be aged at least 2 years. The local sugar, great water and aging process provide an elegant sweet aroma and a refreshing taste.

In March 1922, this distillery was established and named after the Japanese name for March, Yayoi. The distillery has produced Awamori for a long time and started shochu making in the early 50's. The current owner is the 3rd generation, Yozo Kawasaki. The distillery specialises in high-temperature fermentation and atmospheric distillation to make aromatic Shochu with a rich flavor. They are also known for long aging, making the best of oak barrels.

Okierabu Shuzo is a bottling company established in 1969 by 6 distilleries (now 4 of them left). It is located 550km south-south-west of Kagoshima city, in the middle of the upheaved coral reef island Okierabu. While trying various blends, they care very much about the rich flavor of Kokuto Shochu as well as a soft and smooth taste.

Harada Shuzo is located on Okierabu island. The current owner has inherited this small distillery in 1972, and since then they have decided to produce a unique and delicious Kokuto (brown sugar) Shochu, to survive as a small distillery. They started barrel aging and blending and achieved an aromatic and full-bodied Kokuto Shochu. The brand name "Rising Dragon" was inspired by an image that came to the owner while contemplating the full moon.
