LAGOON BREWERY – A New Generation of Japanese Sake Culture
Surrounded by rice fields, waterways, and the long-standing brewing traditions of Niigata Prefecture, one of Japan’s most exciting new voices in sake has emerged since 2021: Lagoon Brewery. Located near the Fukushimagata Lagoon in Niigata — a region renowned for its premium rice, pure water, and some of Japan’s most respected sake breweries — Lagoon Brewery may appear traditional at first glance.
Grey roof tiles, wooden facades, and the calm atmosphere of a classic Japanese sakagura conceal a distinctly modern vision.
The Vision Behind Lagoon Brewery
Lagoon Brewery was founded by Yosuke Tanaka, who spent nearly a decade working in a traditional Niigata sake brewery before pursuing his own path. His vision was clear: to combine the foundations of Japanese sake craftsmanship with a more creative and contemporary approach to fermentation. Because new licenses for traditional nihonshu production have rarely been granted in Japan for decades, Tanaka initially began producing export-only sake.
At the same time, he started developing a new category of beverages often referred to as “Craft Sake” — innovative interpretations of Japanese fermentation culture that explore new ingredients and flavor profiles beyond conventional boundaries.
SHO-KU – Craft Sake from Niigata
Under the SHO-KU label, Lagoon Brewery creates unique beverages that challenge traditional expectations of sake while remaining deeply rooted in Japanese craftsmanship. Alongside rice, water, and koji, Lagoon Brewery experiments with ingredients such as:
- hops
- tomatoes
- basil
- regional herbs
- locally grown fruits from Niigata
The goal is not to replace traditional sake, but to expand the possibilities of Japanese fermentation and create entirely new tasting experiences.
The result is a series of small-batch creations with expressive aromas balancing umami, freshness, herbs, fruit, and elegant acidity.

Despite its experimental spirit, Lagoon Brewery remains grounded in traditional sake-making techniques:

Like many of Japan’s younger craft sake producers, Yosuke Tanaka comes from a traditional brewing background. His work is not a rejection of sake culture, but an evolution of it.
