NINKI was founded in 2007 by Yujin Yusa, a 19th-generation descendant of a samurai brewing family, who revitalized a neighboring brewery with fresh energy and a clear vision: to brew only Ginjo-grade sake using modern thinking and traditional methods. 

The name “Ninki” means “favorite,” and that aspiration is evident in their approach. All sake is brewed in 100-year-old cedar barrels, lending them impressive depth and a gentle cedar nuance. The cold, snowy climate of northern Japan enhances the clean, focused expression of their sake.
