Founded in 1902 in Yurihonjo, a snowy coastal city in Akita, YUKI NO BOSHA became Japan’s first certified organic sake brewery.
The brewery takes a naturalistic approach: fermentation mash is not stirred, allowing a balanced microbial environment to develop. With proprietary yeast strains and a revival of the traditional Yamahai method under master brewer Takahashi, they craft sake with remarkable purity. The name means “Snow-Covered Hut,” and their sake is as clean and refreshing as freshly melted snow.
