Delicate. Pure. Exceptional.
What is IWC?
The International Wine Challenge (IWC) is one of the world’s most prestigious and influential wine and sake competitions. Since 1984, thousands of entries from over 50 countries have been blind-tasted and judged each year by an international panel of experts. Within the dedicated sake category, the IWC is recognized as the global benchmark for quality – the title “Champion Sake” represents the highest honor a brewery can achieve worldwide.
With the Shichiken Hakushin Junmai Daiginjo 2023, the brewery Shichiken (Yamanashi Meijo Co., Ltd.) has created a masterpiece that was awarded “Champion Sake” at the International Wine Challenge 2025 – the highest distinction among 1,476 entries worldwide.
“Hakushin” means “white soul”, perfectly expressing this Sake’s essence: the crystal-clear purity of snow-melt water from Mount Kaikomagatake, flowing through granite and enriched with minerals – the foundation of Shichiken’s refined brewing style. Brewed from Yumesansui rice, grown at the same altitude as the brewery and polished down to 27 % – a symbolic number reflecting Shichiken’s name, meaning “Seven Sages,” where the number 7 recurs throughout all their creations. After over one year of aging at –5 °C, this Junmai Daiginjo reveals exceptional elegance: aromas of white peach, mango, melon, apple blossom and pear, a gentle rice sweetness, silky texture and a clean, mineral finish.
The beautifully designed bottle features the white mountain landscape of Hakushu, illustrated by textile artist Ena Furuya – a symbol of purity, craftsmanship and harmony with nature.
Recommended pairings: Scallops, lobster, sole, pike-perch, risotto with white truffle or pear with Roquefort. Serving temperature: 10 – 15 °C
About the Shichiken Brewery
Founded in 1750, the brewery lies at the foot of the Japanese Alps in the pristine spring water region of Hakushu. Today, President Kitahara continues the family tradition in its 13th generation.
The brewery is renowned for its exceptionally long, cold fermentations and its use of ultra-soft mountain water. These methods give all Shichiken Sake their distinctively refined and elegant character – delicate yet profound. With the Hakushin – White Core, Shichiken once again proves that water, rice and time can become pure luxury.
