With wine, choosing the right glass is second nature: Burgundy is served in a different glass from Riesling. The same principle applies to sake. The shape of the glass can influence how we perceive aroma, sweetness, umami, richness and freshness.

Japanese glass manufacturer ADERIA explores exactly this relationship. Its Craft Sake Glass series was designed to highlight different characteristics of sake through the shape of the glass.

Mellow, Rich Aroma and Refresh therefore offer three distinctly different drinking experiences.

Craft Sake Glass Mellow – for Umami and Richness

The Craft Sake Glass Mellow features a broad, rounded bowl and a narrower opening. Its shape guides the sake towards the centre of the tongue before allowing it to spread towards the back of the mouth. This allows the flavour to unfold broadly across the palate, creating a rounder, softer and fuller impression while highlighting umami, sweetness and body.

Mellow is particularly well suited to Junmai sake, rich and umami-driven styles, as well as aged sake.

In short: the glass for sake where depth, body and umami take centre stage.

Craft Sake Glass Rich Aroma – when Aroma Takes the Lead

The Craft Sake Glass Rich Aroma is all about fragrance. Its generous bowl gives the sake room to open up, while the glass narrows towards the rim. This tulip shape captures volatile aromas and concentrates them towards the nose, making fruity and floral notes particularly easy to appreciate.

The generous bowl also provides enough space to gently swirl the sake and encourage its aromatic complexity to unfold. Rich Aroma is therefore an excellent choice for aromatic Ginjo and Daiginjo sake with pronounced fruity or floral characteristics.

In short: the glass for sake whose fragrance is every bit as fascinating as its flavour.

Craft Sake Glass Refresh – for Freshness and Lightness

The Craft Sake Glass Refresh takes a completely different approach. Its shape is slender and elongated with a wider, gently flared opening. This design creates a smooth, gentle flow of sake into the mouth. Rather than emphasising richness and concentration, the focus is on freshness, lightness and a clean drinking experience.

Refresh is particularly well suited to light, dry and refreshing sake styles. Its slender shape also presents sparkling sake beautifully.

In short: the glass for a fresh, effortless and elegant sake experience.

Ajiwai Tasting Glass – Explore Sake More Consciously

The ADERIA Ajiwai Tasting Glass follows a different concept. It combines the tradition of professional Japanese sake tasting with the advantages of transparent glass. At the bottom of the glass are concentric blue circles inspired by the traditional Janome pattern found inside Japanese Kikichoko tasting cups. The contrast helps tasters assess the colour, clarity and possible cloudiness of sake more accurately.

The shape itself also serves a purpose. It allows the sake to flow slowly from the tip of the tongue into the mouth, particularly enhancing the perception of sweetness. Traditional professional sake tasting cups are usually made from white porcelain. The transparent Ajiwai glass additionally allows the true colour of the sake to be observed clearly.

This makes it an excellent choice for sake tastings, comparative tastings and anyone wishing to explore sake in a more analytical way.

One Sake, Different Glasses, Different Impressions

One of the most interesting ways to experience these glasses is to taste the same sake from several different shapes. The sake itself remains exactly the same – yet its aroma, flow and perception on the palate can change noticeably.

That is the idea behind the ADERIA Craft Sake Glass series:

  • Mellow highlights richness, umami and sweetness.
  • Rich Aroma concentrates fragrance and aromatic expression.
  • Refresh emphasises freshness and lightness.
  • Ajiwai provides a more conscious and analytical tasting experience.

The right sake glass is therefore much more than an attractive accessory. It can influence which side of a sake we experience most clearly – and even allow us to rediscover a familiar sake from an entirely new perspective.
