Butterfly milk

Klaus St. Rainer from the Golden Bar created this sake cocktail and says about it : "It's a summer hit! A fruity, fresh drink with sake and the creamy texture of calpis, the sour milk-based lemonade that is so popular in Japan. A blue concentrate of butterfly blossoms provides the visual kick here."

Ingredients:

80ml NINKI Gold Label Junmai Daiginjo

20 ml Calpis (concentrate for lemonade)

40 ml strongly sparkling mineral water

1 small squeeze fresh lime

5-10 ml Butterfly Blossom Blue (Butterfly Pea Tea or Blue Mallow Blossom Tea)

Recipe:

Fill a small tumbler with ice, add NINKI Gold Label, calpis and mineral water and stir it. Add ice until the glass is full. Squeeze 1 small squeeze of lime over the drink and pour in. At the end, add 5-10 ml of butterfly blossom blue to the drink. In the drink, the blue turns into a deep purple. Butterfly blossom blue is commercially available as butterfly pea tea, anchan blue tea, or butterfly pea extract. Instead of the relatively expensive original, you can just as easily use the much cheaper blue mallow blossoms. Simply boil a very strong tea on it, pour it into a small bottle with a spout and chill. The concentrate can be stored in the refrigerator for about 1-2 weeks.
