The salmon, grilled in perfect harmony of crispy and juicy interior, is cheekily caressed by the candied grapefruit note of the sake. Slight cracking effects of the lentils and their nut flavors, with the green note of spinach and the sour component of Brunoise, form a symbiosis with the fruit flavors of sake and its umami. The foie gras teriyaki foam is silky and elegant. Combined with the sweetness and acidity of the sake, the whole thing delights with classically known flavors and fresh new accents. The experience is rounded off by the slight saltiness of the Ikura, in harmony with the crispy aromas of the salmon skin and exotic fruit aromas of the sake.
