Thanks to the traditional Yamahai production method, the lively Tedorigawa Junmai has a persistent acidity and enough power to accompany and complement this complex and diverse dish. The mushroom and earthy notes emphasize the mild umami taste of the sake while its broad acidity refines the creamy sauce. The gentle character of the sake gives the dish an elegance by underlining the pleasant camphor notes of the marjoram. The creaminess of the sauce emphasizes the milk need of the sake. When served with Suzu-hie, the dish looks more relaxed and fresher. The low alcohol allows the sake to be warmed up, giving the umami, bitterness and acidity a perfect balance and making the nut tones appear more pronounced.
