Nanbu Bijin Tokubetsu Junmai smells intensively of pears and apples and pleasant rice notes. On the palate, it develops a fine rice flavour with a dry impression and a fruity note. Served with “Charcoal-grilled beef tongue marinated with soy sauce vinegar (Nanban vinegar), served with charcoal oil”. This dish starts on the palate with a simple taste, followed by the aftertaste with lots of umami, with the sweetness and refreshing acidity of Nanban vinegar. This flavour goes well with the fruity and mild taste of this sake. Combined with the aroma of charcoal from the dish and a distinct rice flavour of this sake, it brings a pleasant aftertaste. The refreshing taste of sake, which has a good balance between acidity, sweetness and umami, is a character of the Gin Otome rice variety, which the Nanbu Bijin sake brewery has explored with local farmers. Enjoy this sake with company (chilled) at 10°C.
