Unlike the first pairing, I started with the sake. I wanted a dish that needed the acidity of the sake, played with the spiciness of the sake, and above all a terroir dish. A dish that is reduced to the essentials and, like the sake, shows the love for the product. With the beauty of sake and salsify, I have found two partners who have both said yes to the marriage. If you try the dish with a sip of sake, it goes like this: First you taste the florality of the sake paired with the fine yuzu scent of the sauce. The creamy sauce occupies the palate and interacts with the acidity and alcohol of the sake. The spiciness supports the dish and makes it even more elegant. The bite of the salsify brings texture to the mouth and lifts the sake to the next umami level. Finally, the black salsify peel crumble unfolds with its earthy notes on the palate, and the sake refreshes afterwards – kanpai!
