The centrepiece is grilled carabineiro with grilled notes and sweet umami. Salt notes and additional umami from slices of Bayonne ham. “Classic” sauce basquaise with roasted peel, etc. and additionally flavoured with chipotle and sumac. Round-grain rice salad with paprika, mint and especially Japanese sanshō pepper as an additional aromatic highlight. Shredded, briefly raw-marinated celery, parsley-lemon yoghurt, puffed long-grain rice, bronze fennel and especially individual pomelo lamellae for some fruit. The result is a rather complex aroma, but harmoniously tuned and roundly integrated with a variety of chord possibilities.
