The sweetness and salt of the miso make the sake drier, which harmonizes perfectly because it is medium sweet. Gorgonzola has a creamy texture that goes well with the body of the sake, and the cheese is greasy but not too strong and drowning out. The sake is very intense and without the cheese dip the vegetables would perish. Basil as a partner to the fresh melon aroma in sake. Since the cauliflower has a sweet and slightly bitter taste, it takes up the components in the sake well. I chose a vegetarian dish to show that sake can keep up with a lot and because this sake is so versatile, I didn't want to distract you with a fish or meat. A dish rich in umami works well with the umami in the drink and leaves you wanting more.
