The Junmai sake Nanbu Bijin “Southern Beauty” and our Chawanmushi with smoked eel and Perigord truffle make an exciting pairing. To unfold its full potential, everything must be tasted together with the Junmai sake. The sake brings a little fresh kick to the dish at the beginning, perfect of course for the first bite of fish. The creamy chawanmushi reduces the acidity from the sake and the dish itself, making it even more elegant, almost velvety on the palate. After the brief impression of freshness, an impressively fine aromatic mouthfeel emerges. The Southern Beauty sake with its 15% vol. and fine umami makes the glazed eel more harmonious, also noticeably “breaks up” the fats and flavours of the smoked eel, which together with the truffle and slight spiciness from the barbecue glaze rounds it off excellently. The fine sake also gives the dish a noticeable, very long, harmonious aftertaste.
