The sake goes very well with the dish due to the similar taste profiles. The individual components support each other and raise the taste experience of the sake and the dish alike. The umami of the sake goes well with the raw beef and mushrooms, the lingering acidity looks even fresher and is therefore nicely integrated. The Jerusalem artichoke pieces enhance the pear and quince aromas in the sake, making it appear fruity and balanced. The creaminess of the sake and the fermented Jerusalem artichoke sauce complement each other due to the similar mouthfeel and the lactic, slightly sour aroma.
