The char, together with the grape dashi Beurre-Blanc, forms the basis of the dish, on which the other components of acidity, saltiness and fine bitter notes blend in accentuatedly and interact to play to the fore. The finely developed substance of the sake harmonises with the creaminess and melting of the fish and sauce. In addition, its well-balanced acidity is a perfect match for the fine accents of freshness and fruitiness of the grape. The slight bitter aroma of the grapefruit also keeps the flavour from being too sweet and is further enhanced by the slightly salty roasted notes of the flower sprouts. This creates a symbiosis of fine floral elegance and intense aroma peaks that generate a pleasant drinking flow.
