Here, both white and red grapes were used for the individual components in order to use the sweetness and acidity of the fruit and thus also to dock with the aroma of the sake. The walnut fruit bread is also a dream combination with the Katsuyama Lei, as the velvety nuttiness is picked up again here - but interpreted differently. The sake combines in an incredible way, like water on earth in the warm late summer. In the pairing, care was taken to compose a symphony with two notes in which the sake is an octave higher. The sake's umami note is thus put in the spotlight all the more to conjure up a groundbreaking solo.
