Dassai 45 is the perfect accompaniment to dishes, with its aroma and alcohol content it stands out well from food and does not go under, but supports the taste of the food. The creaminess and the slight residual sweetness on the palate harmonize very well with the light sweetness of the meat from the crayfish and the brew that is cooked by the carcasses with coconut milk and mango juice. The stewed pumpkin gives the dish a creaminess and the orange gives it a touch of citrus fruits. Because the sake smells elderly and citrus fruits, the pickled pumpkin in elderberry vinegar is a good contrast to the rest of the dish and gives the whole thing a pleasant freshness. The herbal note in the sake supports the herbal note in the dish and the marigold blossoms.
