The fullness of the Dassai 45 harmonises perfectly with the pork neck as the main component via the slightly nutty flavours of the breading with sesame seeds and the higher fat content of the meat. The same applies to the texture of the creamy emulsion, which takes a little of the breadth out of the sake with its slight sharpness and plays up the subtle acidity. In terms of intensity, the Dassai harmonises especially with the earthy sweetness of the beetroot and fans out an intense play of spices through hints of fine smoked tea. The somewhat riper fruit of the sake also accentuates the tart fruity notes of the kumquat and allows the umami flavour of the saitlings to stand out. The Dassai allows for more intense flavour combinations without lacking freshness in relation to the food.
