I decided on this pairing because the dish and the sake are extremely well balanced. When it came to the main component, it was immediately clear to me that I would take duck, as the sake would go well with the slightly sweet meat. For the sauce, I opted for a classic jus so that the guest can perceive the strikingly good harmony of the very elegant sake and the fine French duck breast. The side dishes support and give the dish complexity and depth. The balsamic rooibos reduction brings floral nuances, which are very good for sake. The “liaison” of the Sookuu and the duck is completely successful in this pairing.
