The elegant Junmai sake is magnificently set off by the halibut. The nashi pear is found in the sake, the fresh acidity and low alcohol content enhances the halibut's own flavour. The Sake Beurre Blanc, rich in amino acids & lactic acid, has a wonderfully elegant flavour in combination with the U.Yoshidagura. The aromatic pungency of the chive oil harmonises beautifully with the light sweet Ishikawamon rice flavours of the sake. The borage herb not only elevates the minerality of the sake to new dimensions, but also enhances the umami of the junmaishu. The Tedorigawa u.yoshidagura Junmai and the Greenland halibut have found each other on an aromatic level.
