This sake has a good balance between a fine umami taste and acidity, goes well with a traditional Japanese kaiseki dish. A regional dish goes well with regional sake from Kyoto, preferably a juicy one Saikyo style black cod. The umami taste of the sake and the umami of the fish harmonize perfectly the sweetness of miso.
