A fantastic interplay of the lightly fruity aromas from the sake, paired with the crispy gyoza and pleasantly intense taste of the Miéral duck, which presents itself in different textures. A gentle transition is followed by the fine white wine acidity which now unites with the stock. Japanese components with Mediterranean influences, more intense spiciness (salt & acid peaks) paired with a pleasant balanced sharpness, which makes this high-quality sake even more exciting. It presents itself powerfully without putting itself in the foreground. Its variety of flavours flatters the dish and is pure umami. Not to forget the fresh crunchiness of the vegetables, which combines with the alcoholic and herbal notes of Dassai 45 in the finish.
