The Caro Pink Junmai Ginjō from the Rihaku Brewery in Shimane Prefecture was brewed with peony blossom yeast, Gohyakumangoku rice and the black rice Shikokumai (which gives it its pink colour). It has the scent of rhubarb, strawberry, and pink flowers on the nose. On the palate, powerful notes of ripe apple, wild berry, grapefruit and black pepper unfold. This is accompanied by “Heaven and Earth Royale”, a tartlet with roasted black pudding and organic foie gras on potato-marjoram puree with caramelised apples, quince jelly, baked shallots and a hearty jus. The dish builds tension in the mouth through different textures, the creaminess of the foie gras and the purée and the crispness of the fried black pudding and the baked shallots. The tension is harmoniously continued on the palate by the notes of wild berry, grapefruit and black pepper in the sake in combination with the sweet-acid-salt interplay of the apples, the jelly and the jus.
