One of my favorite pairings to explain the fascinating term umami to beginners. Shiitake have a strong, earthy taste paired with umami from a high level of glutamic acid. In addition, a creamy risotto with the freshness of thyme. Parmesan also has a high amount of umami. Since this sake is derived from gentle fushimi water, has elegant sanmi and a hint of fresh fruit, this is a very suitable umami pairing. The medium karami cuts nicely through the creaminess of the risotto. I serve this sake Hitohada Kann (body temperature) in Guinomi. The temperature of the sake gives the whole pairing a more pleasant mouthfeel.
