Katsuyama Lei was brewed by Toji Mitsuaki Goto especially for Western cuisine. With its strong body and sweetness, the sake reduces the strong spiciness and sharpness of the marinated Iberico Secreto. However, the acidity in the sake does not make the fat-infused Iberico seem too greasy. The ripe exotic notes of mango, sugar melon & banana are also a perfect match for the Iberico Secreto with their physiological ripeness and at the same time harmonise with the mango cubes and the sake cubes in the Kenia beans. The additional fruity notes in the sake of grape and peach add yet another component to the overall picture. The aubergine miso cream also harmonises perfectly with its fine umami flavour in combination with the umami flavour in the sake. Drinking temperature: 10-12°C

This sake was composed as a pairing to French cuisine. Its delicate Umami and fine sweetness harmonize exceptionally well with raw ham, cheese and desserts.
