The pairing was inspired by the jump & run video game hero Super Mario to trigger the same feeling as when experiencing the Nintendo classic. The vanilla ganache gives the pairing the necessary balance and white chocolate the luxurious indulgence with emphasis. The salt ganache combines beautifully with the dry mineral notes of the sake to give the dessert a fresh, light and airy complex citrus note. The berries dock beautifully with the sake and magically tease out the strong notes of raspberries and blackberries from the sake. This combined with cherry blossom and jasmine is like flying through a whole level of Tanuki Mario only much more aromatic. The different consistencies of the gel, jelly, meringue sticks are emblematic of the different adventures.
