Floral lightness and a freshness typical of Junmai sake join the soft flavours of the sea from the sea bream carpaccio, seasoned with salt lemon, yuzu juice and pink pepper, as well as the raw red Argentina prawn, bursting with its own flavour. The subtle notes of unripe banana and pomaceous fruit complement the mix of the earthy-fresh Jerusalem artichoke puree, paired with spicy mentaiko and the savoury oyster ice cream, which is freshened up in the mouth with the lemon foam. The tartness from the omachi rice and the lactic note from the kimoto method support the roasted, sweet and sour apple with the crispy Jerusalem artichoke and the equally crispy sea bream skin. The lemon meringue crackles when chewed and the Kalette leaves combine the elements of sea and earth into one on the palate. Every sip of sake unites these opposites, which, seen in this way, are no longer opposites at all in the mouth.
