This pairing came about because I wanted to do something innovative and get away from the mainstream. Urakasumi No.12 would actually go better with light starters, light poultry or white fish. So I came up with the idea of a dessert. I kept the composition less sweet, which made the pairing with the sake very successful. The tart and light acidity of the lime, the smoky of the tea and the softness of the buttermilk complement each other perfectly with Urakasumi No.12. The different consistencies and temperatures of the dessert make the sake appear different in the mouth again and again. The Lapsang Souchong gives the dessert something special, which adds a lot to the sake. A light dessert can also pair a sake brewed in a classic style.
