The challenge when pairing for this dish is to use a sake that does not disappear into randomness and brings enough "stamina" with it to stand alongside the smoke aromas without dominating the dish itself. Instead of relying on sake with a nose of aniseed or liquorice, I choose the fine sweetness of Tedorigawa and yoshidagura. This sweetness can be tasted, resonates and gives the food a fine fruit dimension without dominating and without reinforcing the smoke aromas, which are already dominant.
