The Dassai 45 is served in a crystal glass with a stem. The delicate acidity of the sake counteracts the rich Beurre Blanc and creates space for the 7 herbs. Combining the monkfish with the Beurre Blanc doesn't seem like anything new at first glance, but the 7 herbs in combination with the sake still create an interesting and unusual mouthfeel. The salty Passe Pierre algae open the receptivity of the taste for the sake. The light pear note in the sake and the 7 herbs ensure a lasting aromatic feeling in the mouth.
