The sake is served at around 10°C in a white wine glass, so that the freshness and herbal aromas of the sake come to the fore, similar to a light white wine, and the alcohol, at 15% vol, moves into the background. The light freshness of the sake, as well as the herbs and citrus flavours perfectly support the pike perch, and the fact that the fish is marinated in the same sake makes it even more harmonious. The three different types of radish are all milder in flavour (which is counterbalanced by the light tartness of the sake) and of course spicy notes, where the sake harmonises with its herbal spiciness. The light, subtle sweetness and the aromas of Urakasumi No. 12 also go very well with the millet pesto, which also has a slight Asian touch with the coriander.
