The Dassai 45 with its distinctive fruit harmonizes wonderfully with the char in the tartelette, which makes the Dassai even fresher and fruity thanks to the salt and the greasy texture. Almost like having an Alsatian white wine in your glass. The acidity of the sake cuts through the oily fish and enables its taste to develop to the full. The umami of the fish and the roe as well as the sweetness of the pumpkin help to keep the balance between sweetness and acidity. The tartlet dough with its buttery taste nestles nicely against the silky texture of the sake, creating an even more elegant mouthfeel. The rose marinade also flirts with the floral notes of Junmai Daiginjo.
