Sake-Pairing Raspberry Lychee Rose &
Raspberry Lychee Rose Chef: Thomas Imbusch Restaurant: 100/200 Kitchen

Das passende Pairing
A very Japanese idea! Both components have in common that they have a very fine structure and a delicate but present floral-fruity aroma. At first, the rose component, carried by the distinct sweetness, appears very dominant in the macaron. This is exactly where the strength of such a high-quality sake becomes apparent: thanks to its delicate, complex structure, it absorbs the subtleties, instead of being just as dominant and being sweet and intense. As a result, the overall experience wins tremendously. Because the aromatic enhancement through the macaron makes the sake even more accessible and easy to perceive for an inexperienced palate, whereas the macaron itself gains immensely in complexity, as the sweetness takes a back seat.
