The Dassai 45 manages to balance very well between the sweetness of the turnips and the acidity of the leek rings. This is exactly where it acts as a bridge to combine both components. But it also captures the umami of the entrecôte and enriches the variety of flavours in the dish in the first bite. In this way, you travel back and forth between sweetness, acidity and umami, which is brought to perfection not least by the jus. The bean cress garnish adds the final refreshing touch, almost creating an ethereal note in combination with the sake and prolonging the finish of all the flavours in the mouth.
