This pairing highlights the purist qualities of the Rihaku Caro Pink. The mineral notes of the sake complement the samphire very well, which in turn brings the Rihaku Caro Pink to the fore with its slightly salty freshness. The slightly buttery and nutty rock lobster tail is a perfect match for the dry acidity of the sake. The blackberry also goes very well with sake thanks to its flavour and odour profile. The slightly sweet meringues take away some of the acidity of the Rihaku Caro Pink, and the finger lime, for being a citrus fruit, relatively low in acidity but carrying the tart lime flavours, gives the dish a very complex depth that the sake needs in this pairing.
