For me, this delicate, filigree and aromatic junmai is the perfect accompaniment to this fish dish. Both have similar flavours but a different structure. The acidity and spiciness in the broth, brought on by the orange and curry, is perfectly countered by the nihonshu as it delicately counters and its moderate acidity brings the perfect balance to contrast the acidity in the dish. I decided to serve this rice wine with this dish at 10°C in a white wine glass, because it brings even more freshness. This makes it seem even more elegant and delicate, which then leads to an absolute explosion of flavours on the palate and a perfect mouthfeel as it elevates the herbaceous flavours of the dish.
