The Romanesco with its lush taste is balanced by the sweetness of the sake. The umami of Romanesco, obtained during the cooking process, is strongly reminiscent of the umami of sake and is equal to it in the mouth. The plight of the sweet honeydew melon is a suitable counterweight to the peaty, earthy Jerusalem artichoke. The warm aromas of liquorice and salty macadamia not only give texture, but also support the honeydew melon with the necessary salt content.
