A classic dish reinterpreted to be combined with the modern, yet traditionally made Yamahi-Junmai. The fruity sweet and sour play of the sake harmonises with the gently fried salmon fillet in the teriyaki sauce. The sweet potato puree, which has been refined with Asian components, is perfectly combined by the complex character of the yamahai junmai and presents itself with a gentle structure and a great play of aromas. The young onion, which was sautéed in sesame oil and deglazed with the sake, expands the flavours of the dish and is balanced by the umami of the sake. The lemon gel, with its subtle acidity, is supported by the fruity mildness of the sake.
