The roasted flavours of the short rib and the pointed cabbage need a somewhat richer sake with power. The Enter Sake Sooku with its opulence and creaminess fits perfectly here. Its light spiciness and smokiness also go just perfectly with the great smoky flavours of the meat. Its silky texture harmonises wonderfully with the fine celery cream and the mild acidity buffers the sharpness of the horseradish and chives in the sauce, as well as the marinated horseradish slices. The acidity of marinated romaine lettuce leaves and pickled horseradish slices are two components that work well with its mild acidity. The fermented celery roots as a garnish add a certain refinement to the dish, which the sake accompanies excellently with its umami flavour on the palate.
