The involtini are particularly striking for their spicy, full-bodied umami flavour (Parma ham and Pecorino cheese), which forms a perfect harmony with the sweetness and fruity aromas of the Katsuyama. The sake-cream sauce gives the dish a creamy and at the same time slightly acidic taste, which perfectly matches the other characteristics of the Katsuyama. On the one hand, this pairing plays with the contrasts of spicy-salty-umami and sweet-fruity, while on the other hand, the creaminess of the sauce and the light viscosity of the sake combine ideally to create a successful composition. The bitter, slightly astringent taste of the sage is wonderfully complemented by the umami of the lei. The whole thing is rounded off by the nutty note of the buckwheat noodles.
