The ENTER.Sake SOOKUU Junmai is a refreshing, lighter sake and goes well with the beginning of a menu. The sake has a range of salty and fruity flavors, and therefore play with the sweet and salty combinations on the plate. The fruit flavors are reflected in the glass and on the plate through the melon. But as cons, comes the salty and earthy components of daikon, sesame and soy. This contrast brings more fruit and freshness to the sake. Whiskey caviar is very fragrant with a slight smoky aroma. But in addition to the higher alcohol volume of the sake (15.5%), this component feels good. It is also complimented with texture: egg and “caviar” are smooth components that also go well with the sake's round mouthfeel.
