Since sake has a variety of flavours that we perceive, we decided to create a varied, light and vegetarian dish. We find the sake sweet, fresh and fruity, so we prepared the cauliflower differently depending on the colour to reflect the sake. The yellow cauliflower reflects the acidity, the blue the sweetness, and the raw marinated cauliflower greens the floral. The honey-melon note in the sake goes well with the mandarin, the slight acidity and freshness supports the "broad" mouthfeel of the cauliflower and almond. Each component on the plate should harmonise individually or together with the sake.
