The crab bread, which is widespread in northern Germany, may surprise at first sight as a food pairing with sake, but it picks up on the Japanese tamagoyaki. Urakasumi No. 12 is largely neutral on the palate and goes wonderfully with each of the individual components of the dish. The number 12, in combination with the pickled ginger, enhances the freshness of the dish and gives it a fine, subtle fruity note. This very fine, unobtrusive fruit note corresponds perfectly with the sharpness of the wasabi and contributes to the successful marriage of dish and sake on the palate.
