Our dish features both stronger umami flavours (from the pork belly), slightly salty flavours (from the tuna), slightly sweet and sour flavours (from the sake herb) and slightly bitter and nutty flavours (herb oyster and sesame). When pairing, this flavour complexity requires a sake that underlines the variety of flavours without counteracting or overpowering them. The Dassai 45 achieves this in exemplary fashion. In terms of sweetness and acidity, it is in the middle range of taste and thus complements the flavours of the tuna as well as the sake herb in a good manner. But it also knows how to deal perfectly with the umami and slightly bitter flavours. Its slightly fruity and floral notes once again enhance the flavour of the dish.
