The subtle sweetness of the sake soothes the juicy acidity of the brew, calming the palate and preparing it for the next bite. The acidity and lightness of the sake, in turn, lifts and clarifies the distinct flavours of the dish (kiwi, galangal, gherkin), reflecting the slightly musky notes in the sake. The yoghurt combines the different flavours in the dish and is skilfully found on the level of the mild rice yeast aromas of the sake.
