The beetroot bite has the special feature of combining the most varied textures and flavours, e.g., delicate, fruity, explosive, unique, fluid and fresh. This is exactly what we find in this rare and unique nihonshu. The slight spiciness and tart aromas of the sake – cassis, unripe cherry, geranium – match the earthiness and freshness of the beetroot and lemon verbena. The lively feel of the drink's minerality supports the protein of the frozen local sheep yoghurt, while the delicate floral notes of lavender, lilac and rose go hand in hand with verbena, sage and marigold. But the pairing doesn't stop at taste, it continues with other senses – sight. The colour of the drink also matches the dish. Extra tip: serving the drink in a white wine glass at 8 to 11°C is more than ideal. This keeps the feeling of minerality and freshness in our palate. Together: simply delightful!
