The Dewazakura Cherry Blossom appears almost clear as glass and smells of fine aromas of white flower, cucumber and lychee. Highly pure, soft and complex on the palate with a subtle sweetness. This is probably due to the cold brewing season in the snowy region surrounded by mountains in the north of the country. Served with bluefin and hiramasa sashimi, miso aubergine, Koshihikari rice, cucumber and shiso cress broth. The pure and soft taste and sweetness combine immediately with the lukewarm sashimi. The fresh and creamy rice provides a full-bodied sensation on the palate. The miso aubergine with its roasted aromas underlines the umami in the sake and the crunchy texture of the cucumber brings freshness to this successful combination. The slightly piquant spiciness and minerality of the cress broth is perfectly set off by this ginjō without becoming too obtrusive and ensures a long and lively finish.
