The pairing of Nanbu Bijin Junmai and the French toast is exemplary for the concept of a flavour pairing. Buttery and heavy notes of mascarpone together with the caramelised flavours of brioche form a rich base. Complex esters of banana and exotic fruits are found in both the sake and the French toast, enabling the marriage of aromas. Afterwards, volatile notes of the Junmai dominate. Its notes of pear support the lightness of this composition while its woody aromas help to create a multi-layered overall impression. Altogether, the individual components of this pairing form a sum that is more than the individual components.
