With the glazed smoked eel with dashi stock, wasabi and shabu-shabu, the Hatsumago Kimoto Tradition sake is an exquisite accompaniment. It breaks through the crumbly texture and rich character of the smoked eel with invigorating acidity, adding lightness to the tasting experience. The dominant component in the dish is the infused dashi stock. The balanced umami note of the sake pairs perfectly with the strong spiciness of the dashi and is not lost in the intensity of flavour of the dish. The Kimoto Tradition also makes its presence felt in combination with the sweet and sour pickled shabu-shabu vegetable bouquet. With its slight bitterness in the finish, it is a fair counterpart to the sweet component in the dish. Despite the high alcohol content of the rice wine, the subtle spiciness of the wasabi pearls is not intensified, but can be softened by its dry character. Enjoy!
